How to prepare Ghanaian dish Gari Fotor

Similar to couscous, Gari Foto is a Ghanaian delicacy which can be served as a main dish mixed with vegetables or an accompaniment for rice, beans or Jollof.

Prep Time: 5 minutes Cook Time: 10 minutes Serves: 2

INGREDIENTS

1 cup Gari 4 Red chili 1 small Onion, diced. 2 small Tomatoes, sliced. 1cup Palm oil Avocado Salt DIRECTION -Pour chili, onion and salt into an earthen ware bowl and grind into a smooth paste. -Add the tomatoes and grind into a smooth mixture. -Heat palm oil, add sliced onions, stir and let cook for a minute. -Pour oil in the mixture and mix well. -Dissolve salt on water and mix with the gari to moisten it. -Add the gari to the grind pepper mixture and mix through till evenly coated -Top it up with Avocado and sliced onion.
